Blueberry Basil Salad

The blueberry basil salad tastes like pure summer!

Ingredients

  • 250 g blueberries
  • 2 ripe papayas
  • 100 g peeled almond kernels
  • 20 g basil (1 bunch)
  • 1 tbsp honey
  • 1 tbsp Lemon Juice

Instructions

    Wash blueberries gently and pat dry. Peel papayas, halve them, remove seeds and dice the fruit into small cubes. Roast almonds in a pan without fat until golden brown and let cool.

    Wash basil, shake off excess water and chop. Mix blueberries and papaya cubes with basil, honey and lemon juice and chill for about 30 minutes. Just before serving fold in roasted almonds.
