Emmer Apple Cake with Sunflower Seed Crust

Ingredients

  • 250 g Emmer whole‑grain flour
  • 2 egg yolks
  • 1 pinch of salt
  • 80 g honey
  • 150 g butter
  • 5 small apples
  • 2 tbsp lemon juice
  • 150 g peeled sunflower seeds
  • 50 g honey
  • 30 g Butter

Instructions

    Knead the flour with the egg yolks, salt, honey and butter, then wrap in foil and let rest for 30 minutes. Grease a 22 cm cake tin with butter and line it with the rolled dough. Preheat the oven to 200 °C and bake the crust for 15 minutes.

    Meanwhile peel, halve and core the apples, then drizzle with lemon juice. Place the apple halves on the pre‑baked crust. Mix the sunflower seeds with honey and distribute evenly over the apples. Drizzle melted butter over the cake and bake in the hot oven for another 20–25 minutes until golden.
