- 200 g digestive biscuits
- 100 g butter
- 10 sheets gelatin
- 300 g quark
- 300 g cream cheese
- 3 eggs
- 150 g sugar
- 20 g flour
- 1 untreated lemon (zest)
- 60 g Butter
- 200 ml orange juice

For the base, finely crush the digestive biscuits in a food processor. Place the butter in a bowl and melt it in the microwave at 100 watts for about 2 minutes. Mix the melted butter with the biscuit crumbs well and pour into a microwave‑safe springform pan. Press about two‑thirds of the mixture into the bottom, then lift the remaining part to form a rim. Set the base aside to cool.

Soak 7 sheets gelatin in cold water.

Whisk together quark and cream cheese with eggs, sugar, flour, and lemon zest. Add the still wet gelatin to a container and melt it at 600 watts for about 10 seconds. Quickly fold into the cream and spread over the cake base. Chill the cheesecake for about an hour.

For the glaze, soak the remaining gelatin sheets for about 5 minutes. Melt the butter at 70 watts for about 1 minute. Dissolve the wet gelatin at 600 watts in about 5 seconds. Mix the butter with orange juice. Add a little of this mixture to the gelatin, then stir the gelatin into the liquid. Chill until the liquid starts to set slightly. Spread over the cheesecake and chill another ~2 hours.
