Ingredients
- 300 g spelt whole‑grain flour
- 2 tsp Baking powder
- 180 g cold butter
- 160 g honey
- 1 egg yolk
- 100 g ground hazelnuts
- 100 g whole hazelnut kernels
Instructions

Mix flour with baking powder. Add 80 g butter in pieces, 80 g honey and the egg yolk, then quickly knead into a smooth dough.

Transfer the dough to a greased baking tray and spread it evenly into a rectangle about 35 × 20 cm using slightly damp hands.

In a small pot melt the remaining butter. Add the leftover honey, ground and whole nuts, and slowly bring to a gentle boil while stirring.

Spread the mixture evenly over the dough. Bake in a preheated oven at 200 °C (mid‑rack) for about 15 minutes. Remove, cut into pieces while still hot, and cool on a wire rack.
