Chocolate Tarte with Hazelnuts
The chocolate tarte with hazelnuts is always well received and can replenish iron reserves through the nuts.
Ingredients
- 1 egg
- 100 g whole wheat flour
- 100 g wheat flour type 1050
- 50 g cocoa powder
- 220 g butter
- 100 g Raw sugar
- 2 Tbsp whipping cream
- 200 g hazelnuts
- 3 tbsp hazelnut spread
- 1 tsp orange zest
- 2 tbsp Cornstarch
- 300 ml milk (1.5% fat)
- 150 g dark chocolate

Separate the egg and place the yolk with the flours, cocoa, 180 g butter, 50 g sugar and whipping cream in a bowl. Knead together with the dough hooks of an electric mixer, transfer to a lightly floured surface and knead by hand into a smooth dough, roll thin between two sheets of foil and line a tart pan with it, refrigerate.

Chop the nuts, then roast them in a pan, add the remaining butter and sugar and let them caramelize slightly, stir in hazelnut spread and orange zest.

Spread the caramel mixture over the dough, smooth it out. Bake in a preheated oven at 200 °C (fan 180 °C; gas: level 3) for about 15–20 minutes.

Meanwhile whisk cornstarch with a little milk until smooth, chop the chocolate and melt it in the remaining milk, bring to a boil. Add the dissolved starch under constant stirring to the boiling milk mixture and let it thicken once, then cool slightly. Whisk the remaining yolks and quickly fold them in. Spread the chocolate cream over the chocolate tarte and allow it to cool and set (3–4 hours).
