Ingredients

  • 2 kg small pork leg ham without rind (1 small pork leg ham)
  • 1 onion
  • 1 bay leaf
  • 1 tsp peppercorns
  • 2 juniper berries
  • 4 cloves of spice clove
  • white wine (for basting)
  • grapes (for garnish)

Instructions

    Place the ham in a pot. Add enough cold water to cover it by two fingers. Chop the onion and add with bay leaf, peppercorns, spice cloves, and juniper berries. Bring slowly to a boil and let the meat simmer for 1 hour.

    Remove the meat, season all around with pepper. Place the ham on a rack and put in an oven preheated to 180°C. Bake for about 60 minutes, basting occasionally with wine.

    Serve with grapes.
