Halloween Ghost Cookies

Ingredients
- 1 egg
- 4 tbsp warm water
- 125 g sugar
- 1 packet vanilla sugar
- 1 tbsp orange zest
- 175 g wheat flour
- 1 tsp Baking powder
- orange-colored sugar (pre-made)
- 3 tbsp orange jam

Preheat the oven to 180°C.

Beat the yolk with the water using a whisk or electric hand mixer until frothy. Gradually add two-thirds of the sugar, then mix in the vanilla sugar and orange zest. Continue beating until the mixture thickens into a cream.

Whip the egg white to stiff peaks. While whipping, gradually add the remaining sugar. The meringue should be firm enough that a knife slice remains visible. Fold the stiff meringue into the yolk mixture. Mix the flour with the baking powder and sift over the batter, then fold gently.

Place the dough in small greased molds or onto a parchment-lined tray as tiny lumps spaced slightly apart to allow for expansion. Sprinkle with colored sugar and bake for 15 minutes until golden yellow. Let cool, optionally release from molds before cooling fully.

Meanwhile, mix the orange jam with 1 tbsp water and warm gently over low heat until liquid. Brush half of the cookies on their unsugared side with the jam and place the other half (sugar side outward) on top.
