Apple Cookies with Dried Apricots

Ingredients
- 60 g dried soft apricots (4–6 dried soft apricots)
- 40 g dried apple rings
- 30 g ground flaxseed (2 tbsp)
- 100 ml Oat drink (Oat milk)
- 130 g coconut oil
- 75 g unsweetened applesauce (5 tbsp)
- 180 g tender rolled oats
- 70 g ground almonds
- 15 g psyllium husk powder (3 tsp)
- 1 tsp Baking Soda
- 0.5 Vanilla pod
- 0.5 tsp cinnamon powder
- 1 pinch salt

Dice the apricots and apple rings finely. Mix flaxseed with oat drink and dried fruits. Melt coconut oil over low heat, pour in, add applesauce, and let soak for about 10 minutes.

Meanwhile split the vanilla pod lengthwise and scrape out the seeds. Combine rolled oats with almonds, psyllium husk powder, and baking soda. Add vanilla seeds, cinnamon, and a pinch of salt. Then mix the oat‑flaxseed mixture together.

Scoop roughly 1 tbsp portions (e.g., with an ice cream scoop), shape into 20 balls, place on parchment paper, and press lightly. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 15 minutes until golden brown.
