Easy butter-free cookies can be baked at home with minimal effort. Here’s the recipe!
Ingredients
- 4 egg whites
- 1 pinch salt
- 2 tbsp lemon juice
- 150 g powdered sugar from raw cane sugar
- 500 g ground almonds
- 2 tsp Cinnamon

Beat egg whites with salt and lemon juice until stiff. Gradually fold in 130 g powdered sugar, continuing to beat until the mixture is stiff and shiny. Knead in almonds and cinnamon, then cover the dough and refrigerate for about an hour.

Roll out the dough to a thickness of approximately 4 mm, cut out star shapes (in various sizes), place them on a baking sheet lined with parchment paper, and let dry at room temperature overnight. Bake the butter‑free cookies in a preheated oven at 170 °C (convection 150 °C; gas: level 2) for about 10 minutes. Remove and allow to cool. Dust with remaining powdered sugar before serving.
