Christmas Cookies Without Butter

Ingredients

  • 3 egg whites
  • 1 pinch salt
  • 250 g sugar
  • 1 tbsp cinnamon
  • 350 g almonds
  • 1 tsp quince jam

    Beat the egg whites with salt until stiff peaks form. Gradually add sugar while continuing to beat until it dissolves and the mixture becomes a shiny, fluffy white foam. Set aside 3 tablespoons of this for the glaze.

    Fold in cinnamon, almonds, and quince jam into the remaining egg white mixture. Knead into a smooth dough, then roll out between two sheets of parchment paper to about 4 mm thickness. Cut out star shapes, lightly brush with the reserved glaze, and place on a baking sheet lined with parchment paper to dry overnight.

    Bake the cookies in a preheated oven at 130°C for about 15 minutes. Cool them on a wire rack and store them dry.
