Halloumi with Salad

Protein-rich recipe featuring halloumi and crisp salad—a perfect light dinner or lunch.

Ingredients

  • 150 g cocktail tomatoes
  • 400 g halloumi
  • 150 g wild arugula
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • coarse Sea salt
  • Pepper
  • 2 tbsp balsamic vinegar

Instructions

    Wash and halve the tomatoes. Slice the halloumi and place on the hot grill rack. Grill each side 4-6 minutes until golden brown. Place the tomatoes cut-side down next to the halloumi and grill for 3 more minutes.

    Meanwhile, wash and trim the wild arugula as needed. Toss the olive oil with lemon juice. Roughly chop about a handful of arugula and stir into the dressing. Season with salt and pepper.

    Arrange the grilled halloumi and tomatoes on plates, lightly salt, and drizzle the dressing over them. Garnish with extra arugula and drizzle balsamic vinegar before serving.

    Serve with a light white wine.
