Delicious Sweet Potato Toast with Smoked Salmon by Spoonsparrow is a great low-carb alternative to toast bread.
Ingredients
- 300 g sweet potatoes
- 150 g quark (20% fat)
- 2 sprigs dill
- 2 sprigs parsley
- 1 tsp lemon juice
- Salt
- Pepper
- 1 Mini Cucumber
- 0.25 yellow bell pepper
- 150 g Smoked salmon

Peel, wash, and cut the sweet potatoes into about 4–6 slices. Bake the slices in a preheated oven at 200 °C (180 °C fan; gas: level 3) for approximately 8–10 minutes.

Meanwhile, place the quark in a bowl and whisk until smooth. Wash, dry, and chop the herbs. Set aside some dill. Mix the quark with the herbs, lemon juice, salt, and pepper to taste.

Remove the sweet potato slices from the oven and let them cool. Peel, wash, and slice the cucumber and bell pepper into rounds or strips. Spread the herb quark on the sweet potato toast, top with smoked salmon, garnish with cucumber and pepper, and sprinkle with the remaining dill.
