Ground Meat Steaks with Feta and Oregano

Ingredients
- 1 old-fashioned roll
- 2 Garlic cloves
- 0.5 bunch spring onions
- 0.5 bunch oregano
- 200 g feta
- 150 g plain yogurt
- Salt
- Pepper (freshly ground)
- a splash lemon juice
- 600 g lamb ground meat
- 1 egg
- Cayenne pepper
- 20 g clarified butter
- 4 tomatoes
- 1 cucumber
- 2 red onions
- 75 g pitted black olives
- 8 mild peppers (jarred)
- 4 tbsp olive oil
- 2 tbsp white wine vinegar

Soak the roll in lukewarm water. Preheat the oven to grill mode. Peel and finely chop the garlic. Wash, trim, dry, and slice the spring onions into thin rings. Rinse the oregano, shake dry, pluck half of the leaves, and finely chop.

Crush the feta and mix with yogurt, spring onions, chopped oregano, and half the garlic. Season with salt, pepper, and a splash of lemon juice to taste.

Combine the ground meat with the remaining garlic, well-expressed roll crumbs, and egg. Season with salt and cayenne pepper. Form patties from the mixture. Fry them in hot pan with melted clarified butter until golden brown on all sides; spread the cheese mixture over each patty and bake in preheated oven for 4-5 minutes to gratinate.

Meanwhile wash tomatoes and cucumber; remove tomato stems and cut into wedges, halve cucumber lengthwise and slice thinly. Peel onions and cut into strips. Drain olives and peppers, then mix with tomatoes, cucumber, and onions.

Whisk olive oil with white wine vinegar, season with salt and pepper, and drizzle over the salad. Garnish the meat steaks with remaining oregano and serve with salad and fresh white bread if desired.
