Ingredients

  • 1 onion
  • 1 tsp butter
  • 600 g lamb ground meat
  • 1 egg
  • 3 tbsp breadcrumbs
  • 2 tbsp freshly chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 1 tsp hot paprika powder
  • 0.5 tsp cumin
  • 1 tsp Ras el-Hanout
  • olive oil
  • 2 handfuls beet greens

Instructions

    Peel and finely chop the onion, then sauté it in hot butter until translucent. Mix the lamb meat, egg, breadcrumbs, chopped parsley, salt, pepper, hot paprika, cumin, and Ras el-Hanout well; first form into balls, then shape them lengthwise into 8-12 skewers. Brush with oil and grill over high heat, turning occasionally, for 8-10 minutes until cooked through.

    Rinse the beet greens, drain thoroughly, and arrange on plates. Place the skewers on top and serve immediately.
