Meatballs Filled with Quail Eggs

Ingredients

  • 1 old-fashioned roll
  • 16 quail eggs
  • 1 small Shallot
  • 3 Tbsp plant oil
  • 600 g mixed ground meat
  • 1 egg
  • 1 tsp sharp mustard
  • Salt
  • pepper (ground)

Instructions

    Soak the roll in lukewarm water.

    Hard boil the eggs for about 6 minutes, drain, cool and peel.

  3. 3.

    Peel the shallot, finely chop it and sauté in a pan with 1 tbsp oil until translucent. Remove from heat and let cool.

    Knead the ground meat with the egg, mustard, shallot and well-extracted roll, seasoning generously with salt and pepper.

  5. 5.

    Shape small balls from the mixture, flatten slightly, insert a quail egg into the center, cover with more meat mixture and reshape into balls again.

  6. 6.

    Brown the balls in a hot pan with the remaining oil until golden all around, remove and serve on green salad. Offer lingonberries if desired.
