Greek-Style Lamb Kofta Skewers with Yogurt Sauce

Ingredients

  • 4 pita breads
  • 250 g plain yogurt
  • 1 tbsp Lemon Juice
  • 1 tbsp chopped parsley
  • 1 stale roll
  • 125 ml lukewarm milk
  • 4 Garlic cloves
  • 1 tbsp Olive Oil
  • 600 g ground lamb
  • 1 egg
  • 1 tsp chopped thyme
  • 1 tsp chopped rosemary
  • 0.5 tsp chopped chili peppers
  • salt, pepper (ground)
  • 32 fresh bay leaves

    Soak the stale roll in lukewarm milk until softened. Peel and finely chop 2 garlic cloves. Heat olive oil in a pan and sauté the garlic until golden brown. Mix the ground lamb with the drained roll mixture, egg, remaining garlic, herbs, chili, salt, and pepper. Form small balls from the meat mixture and thread each onto skewers alternating with bay leaves.

    Grill the skewers over high heat for 10-15 minutes, turning occasionally, until cooked through. Place pita breads on the grill to toast golden brown. For the dip, peel the remaining garlic cloves and blend into yogurt; season with salt, pepper, and lemon juice. Serve the skewers with toasted pita and a bowl of yogurt dip sprinkled with chopped parsley.
