Ingredients

  • 800 g fresh calamari (prepped)
  • 5 tomatoes
  • 3 tbsp parsley (finely chopped)
  • 2 Garlic cloves
  • Olive oil (extra virgin)
  • 2 tbsp freshly squeezed lemon juice
  • Salt
  • freshly ground pepper

Instructions

    Wash the tomatoes, blanch, peel, halve, core and finely chop. Peel the garlic and crush in a mortar with a pinch of salt to make a paste. Mix tomatoes, garlic, parsley, 4 tbsp olive oil, lemon juice, salt and pepper; let rest for 15 minutes.

    Meanwhile wash the calamari, pat dry and cut into thick rings, leaving the tentacles whole. Place on a preheated grill (charcoal or electric) and grill each side for 3-4 minutes. Toss the hot calamari with the tomato-garlic sauce and serve immediately with fresh crispy white bread.
