Squid with Spring Onions

Ingredients

  • 700 g fresh calamari (ready to cook cleaned)
  • Salt
  • pepper (ground)
  • 4 Spring Onions
  • 4 Garlic cloves
  • 3 red chili peppers
  • 1 bunch parsley (as needed)
  • 3 sprigs Thai basil
  • Basil
  • coriander leaves
  • 2 sprigs Mint
  • 6 tbsp oil
  • 200 ml fish stock
  • 4 tbsp fish sauce

Instructions

    Wash the squid and cut into 2x3 cm pieces.

    Bring salted water to a boil and blanch the squid pieces briefly. Drain in a sieve and let rest.

    Clean the spring onions, wash them, and cut the white and light green parts into short pieces. Peel garlic and slice thinly. Halve chili peppers lengthwise, deseed, wash, and slice thinly as well.

    Wash herbs, shake dry, pluck leaves, leave tender stems whole.

    Heat oil in a wok over high heat and quickly stir-fry the squid pieces, then add spring onion pieces, garlic and chili strips and cook until translucent. Add fish stock and bring to boil. Season with fish sauce, salt and pepper strongly. Mix in herbs and serve immediately.
