Ingredients

  • 800 g Calamari (pre‑cleaned)
  • 200 g Flour
  • 250 ml white wine
  • 2 Eggs
  • 2 tsp oil
  • Salt
  • pepper (ground)
  • 2 tbsp chopped parsley
  • 1 lemon half (optional)
  • oil for frying

Instructions

    Wash the calamari, pat dry and cut into thick rings.

    Separate the eggs. Whisk the flour with the white wine until smooth. Stir in yolks, oil, a pinch of salt and pepper, then fold in the beaten egg whites. Coat the calamari rings in the batter and fry portions in hot oil until golden brown. Drain on kitchen paper and sprinkle with parsley before serving. Offer lemon halves if desired.
