Ingredients

  • 600 g small fresh calamari (ready to cook)
  • 5 tbsp Lemon juice
  • Salt
  • pepper (ground)
  • 4 tbsp olive oil
  • 1 tbsp chopped parsley
  • 600 g papaya (2 papayas)
  • 0.5 bunch scallions
  • 1 red bell pepper
  • 1 red chili pepper
  • Cayenne pepper
  • 0.5 bunch Basil

Instructions

    Wash the squid cold and cut into pieces about 2 cm in size.

    Whisk 3 tbsp lemon juice with salt, pepper and olive oil in a bowl, fold in parsley. Toss calamari with this mixture and cover to chill in the refrigerator.

    Halve papayas, remove seeds and thinly peel. Set aside half, dice remaining flesh. Wash scallions, trim and finely dice. Wash bell pepper, halve, seed, remove white membranes and finely dice. Slice chili lengthwise, seed and finely dice.

    Coarsely chop remaining papaya half and puree, then fold in papaya cubes, bell pepper, scallions and chili. Season with salt, pepper, cayenne and remaining lemon juice. Tear basil leaves, finely chop and mix into the salsa.

    Remove squid from marination, drain briefly and sear in a large hot pan for 2-4 minutes. Plate calamari with lime wedges and serve with papaya salsa.
