Grilled Squid Skewers

Ingredients
- 8 pre‑cooked calamari
- 1 small carrot
- 1 small stalk of celery
- 1 onion
- 3 cloves garlic
- 3 tbsp olive oil
- 50 g passata (ready product)
- 1 bunch flat parsley
- 8 Cherry tomatoes
- 2 slices day‑old toast bread
- 3 tbsp grated Parmesan cheese

- 1 tbsp oil for brushing

- ground pepper
Instructions

Rinse the calamari cold and pat dry. Separate the tentacles and dice them small. Peel, wash, and finely dice the carrot and celery. Peel and mince the onion and garlic cloves.

Heat the oil in a pot and add the vegetables and squid, season with salt, and simmer for about 5 minutes. Add the passata and cook for another 10 minutes.

Meanwhile, wash and dry the parsley, shake off excess water, and chop the leaves. Wash and quarter the cherry tomatoes. Crumble the toast bread. Combine parsley, tomatoes, toast, and parmesan with the vegetable mixture, mix well, and fill the squid with this mixture.

Thread the squid onto wooden skewers, brush with oil, and season with salt and pepper. Grill over medium heat on a grill grate for about 5 minutes per side.
