Ingredients
- 600 g calamari (pre‑cooked)
- 1 Garlic clove
- 4 baby fennel bulbs
- 2 tbsp olive oil
- 2 tsp sea salt
- 1 untreated lemon (zest)
- 1 tsp fennel seeds
- 1 tsp freshly chopped dill
- pepper (ground)
- a splash of lemon juice
Instructions

Rinse the calamari, pat dry, cut off tentacles, slice tubes into pieces and make cross‑hatch cuts. Place in a bowl. Peel and finely chop the garlic. Rinse the fennel, trim, and slice thinly. Set aside fennel fronds for garnish. Mix fennel, garlic, and olive oil with the squid.

Grill over high heat, turning regularly, for about 6 minutes.

Combine salt with lemon zest, fennel seeds, dill, and pepper.

Remove grilled squid from the grill, arrange on a platter, drizzle with lemon juice, sprinkle with seasoning salt, and garnish with fennel fronds. Serve immediately.
