Grilled Spring Onions

Ingredients
- 2 red bell peppers
- 500 g spring onions
- 4 tbsp rapeseed oil
- coarse Sea salt
- Pepper (freshly ground)
- 40 g shelled almonds
- 1 tbsp ajvar
- 2 tbsp breadcrumbs
- garlic salt
- 1 tsp dried rosemary
- a splash lemon juice

Wash the peppers, halve them, remove seeds and white membranes, and place skin-side down on a hot grill for 10-15 minutes. When the skin blisters black, remove from grill and let cool covered with a damp cloth.

Wash the spring onions, trim roots and ends, drizzle with oil, season with salt and pepper, and press between grill grates. Grill for 6-8 minutes, turning halfway through.

Remove the skins from the peppers and blend them with almonds in a blender. Add ajvar and puree into a creamy paste. If desired, fold in breadcrumbs and season the salsa with garlic salt, rosemary, and lemon juice. Serve in a bowl alongside the grilled spring onions.
