Grilled Spare Ribs

Ingredients
- 1 piece pork rib (about 1.5 kg)
- 3 cloves garlic
- 1 stalk lemongrass (only the white and light green parts)
- 2 red chili peppers
- 1 tbsp freshly grated ginger
- 2 tbsp freshly chopped cilantro leaves
- 1 tsp ground cinnamon
- 0.5 tsp five-spice powder
- 100 g liquid honey
- 120 ml soy sauce
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 2 untreated lemons
- Salt

Rinse the ribs, pat dry and place in a shallow dish.

For the marination, peel and press the garlic into a small bowl. Slice the lemongrass into thin rounds. Wash, halve and finely chop the chili peppers. Mix the ginger, lemongrass, cilantro, cinnamon, five-spice powder, honey, soy sauce, brown sugar, sesame oil, and garlic together. Slice one lemon, squeeze juice from the second, and combine both with the marination. Pour over the ribs, cover, and refrigerate overnight or at least 4 hours.

Take the ribs out of the fridge about 30 minutes before grilling. Drain well and grill on a hot grill, turning regularly for about 45 minutes. Brush with more marination throughout. Remove the rib rack from the grill and cut into individual ribs on a cutting board. Reapply marination, briefly return to the grill, then season with salt and serve.
