Grilled Skewers with Lamb and Cherry Tomatoes

Ingredients

  • 800 g lamb meat (from the shank)
  • 8 tbsp olive oil
  • 3 tbsp light soy sauce
  • 2 tsp salt
  • 2 Garlic cloves
  • pepper (ground)
  • 8 skewers
  • 2 tsp thyme
  • 250 g yellow cocktail tomatoes
  • 250 g red cocktail tomatoes
  • olive oil
  • aluminum foil

Instructions

    Cut the meat into bite-sized pieces. Whisk the olive oil and soy sauce vigorously for the Marinade. Peel and press the garlic. Stir in salt, garlic, and pepper.

    Coat the meat with the mixture and marinate overnight in the refrigerator. The next day, remove the meat from the Marinade, pat dry, and skewer it.

    Wash the tomatoes and alternate them on the skewers. Place these side by side on a greased piece of aluminum foil and grill for about 15 minutes, turning occasionally.

    Brush the lamb skewers with the Marinade and grill, turning frequently, until golden brown all around in about 8–10 minutes; finish by sprinkling thyme leaves.

    Arrange both skewers on plates and serve.
