Bulgur Lamb Skewers

Ingredients

  • 125 g bulgur
  • 125 ml Vegetable broth
  • 3 shallots
  • 1 bunch parsley
  • 600 g lean ground lamb
  • piment
  • Cumin
  • Cinnamon
  • Cayenne pepper
  • Salt
  • freshly ground pepper
  • 6 tbsp oil
  • 4 meat tomatoes
  • 1 cucumber
  • 4 tbsp balsamic vinegar
  • 20 skewers

Instructions

    Soak bulgur in cold water for 10 minutes, then drain. Bring vegetable broth to a boil and add bulgur; simmer gently for about 12 minutes until cooked. Let cool.

    Peel shallots and finely dice them. Wash parsley, shake dry, pluck leaves and finely chop.

    Knead ground lamb, bulgur, half the parsley, two‑thirds of the diced shallots, and spices into a dough. Season with salt and pepper. Press the mixture onto the skewers.
