Grilled Shrimp Skewers with Spicy Aioli

Ingredients

  • 3 cloves garlic
  • 1 red chili pepper
  • 3 egg yolks
  • 1 tsp hot mustard
  • 1 tsp ketchup
  • Salt
  • Pepper (freshly ground)
  • 150 ml olive oil
  • 0.5 tbsp lemon juice
  • sweet-sour chili sauce (for garnish)
  • 16 large shrimp (prepped for cooking)

  • 1 tsp chopped parsley

Instructions

    Let all aioli ingredients sit at room temperature until they reach room temperature. Peel the garlic cloves and press them. Wash, halve, deseed, and finely chop the chili peppers.

    Add the egg yolks, mustard, ketchup, a pinch of salt and pepper to a large bowl and whisk until white and creamy. Add the oil in small drops first, then slowly drizzle while continuously whisking. Always fully incorporate the oil before adding more. Season with salt and lemon juice. Transfer to a shallow dish, garnish with some sweet-sour sauce, and chill.

    Peel the shrimp, remove the vein, rinse, and drain. Thread onto wooden skewers and season with salt and pepper. Preheat the grill or hot stone and cook the shrimp, turning occasionally, until cooked through. Sprinkle with parsley and serve with aioli on the side.
