Ingredients
- 16 shrimp (peeled except for tail segment, deveined)
- 175 g potato starch
- 175 ml water
- 2 tsp Baking powder
- 2 egg whites
- oil (for frying)
- 2 tbsp honey
- 1 clove garlic (finely chopped)
- 2 chili peppers (finely chopped)
- 1 tbsp Sesame oil
- 100 ml light soy sauce
- 1 tsp ginger (finely chopped)
- 2 tbsp cilantro leaves (chopped)

Combine all ingredients for the chili sauce and let steep for 2 hours.

Whisk potato starch with baking powder and cold water until smooth. Beat egg whites until stiff peaks form and fold into batter.

Heat oil to 180°C (when a wooden spoon stick rises bubbles at this temperature).

Dip shrimp in batter, fry in hot oil for about 1-2 minutes per batch until golden brown, serve with chili dip.
