Fried Shrimp with Tomato Sauce

Ingredients
- 5 red bell peppers
- 200 g onions
- 3 Garlic cloves
- 1 small can peeled tomatoes
- 3 tbsp chopped cilantro leaves
- 4 tbsp chopped parsley
- Salt
- white pepper
- 20 pre-cooked shrimp
- 1 tsp finely chopped coriander
- 4 limes
- 2 tbsp sesame oil
- 1 piece fresh ginger
- 1 Garlic clove
- 1 tbsp Rice vinegar
- Salt
- 2 tbsp Vegetable oil

Finely chop the bell peppers, peeled onions and garlic cloves for the salsa. Add tomatoes (with juice) and all other ingredients, stir until boiling, then season.

Fill the sauce into hot-washed jars, seal and let cool. Let it rest for at least 24 hours before serving. Store in refrigerator.

Wash and finely chop cilantro. Peel and grate ginger. Peel and finely chop garlic. Mix coriander, lime juice, rice vinegar, ginger, garlic, sesame oil and a pinch of salt well. Wash shrimp and pat dry with kitchen paper. Combine shrimp with the mixture and let marinate for about 2 hours. Drain shrimp, skewer onto wooden sticks, and briefly fry in hot oil on both sides. Serve hot over salsa, garnished with lime zest, alongside fresh white bread.
