Ingredients
- 2 slices of fresh salmon (thick and cut across, about 180-200 g)
- kitchen twine
- Salt
- Pepper (freshly ground)
- 1 tbsp Lemon Juice
- olive oil
- 1 tbsp Dijon mustard
- 2 tbsp butter
- 1 shallot (finely chopped)
- 2 tbsp dry white wine

Tie the salmon slices with kitchen twine on the skin side, season with salt and pepper, drizzle with lemon juice, and brush with a little olive oil. Grill over medium heat for about 3 minutes per side.

For the mustard sauce, sauté the chopped shallot until translucent, add white wine and let simmer slightly, whisk in mustard, and season with salt and pepper to taste.
