Ingredients

  • 250 g scallops, cleaned, sushi grade
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 4 tomatoes
  • 60 g black olives
  • 2 basil stems
  • 2 shallots
  • 40 g pine nuts

Instructions

    Wash the scallop meat and pat dry with paper towels. Dice the scallop meat and mix with 1 tbsp lemon juice and olive oil. Season with salt and pepper.

    Wash the tomatoes and grate them dry. Trim off the stem ends and dice the tomato flesh. Chop the olives, pluck basil leaves from stems and finely chop. Peel and finely mince the shallots. Mix pine nuts, tomatoes, shallots and basil; season with remaining lemon juice, salt and pepper. Layer the scallop tartar and tomato mixture alternately in 4 glasses and garnish with basil.
