Ingredients

  • 1 ripe passion fruit
  • 4 scallops (cleaned)
  • Salt
  • colorful pepper
  • 4 tsp finely grated parmesan
  • 1 chicory
  • 1 tsp Olive oil
  • 1 blood orange (filleted)
  • 2 slices toast bread
  • butter

Instructions

    Preheat oven to grill setting. Squeeze the passion fruit. Season scallops with salt and colorful pepper. Drizzle a little passion fruit juice over each scallop and sprinkle 1 tsp parmesan on top. Broil in the oven for about 10 minutes.

    Slice chicory into strips. Sauté in olive oil, season with salt and pepper. Fold in blood orange fillets, let warm slightly. Arrange scallops on top and serve with buttered toast.
