Ingredients
- 2 Tomatoes
- 12 scallops (prepped, fresh, with Corail)
- 4 tomatoes
- 4 stems basil (cut into strips)
- 1 clove garlic (chopped)
- 1 small onion (chopped)
- 4 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 50 ml Vegetable broth
- basil (for garnish)
Instructions

Heat water and steep tomatoes, peel, quarter, remove seeds, and dice.

Sear scallops and the Corail in hot olive oil for about 2-3 minutes per side. Remove from pan and sauté onions, garlic, and tomato pieces in remaining fat, add broth, bring to a quick boil, season with salt and pepper, stir in basil. Plate on dishes, place three scallops and the Corail on top, pepper, and garnish with basil.
