Scallops with Sprouts

Ingredients
- 50 g fresh sprouts
- 2 lemons
- 1 Garlic clove
- 175 g small ripe avocado (1 small ripe avocado)
- 1 tsp wasabi paste
- Salt
- white pepper
- 12 scallops (pre‑cooked, ready to use)
- Pepper
- 1 tbsp Rapeseed Oil
- 1 tbsp yogurt butter
- vanilla salt
Instructions

Wash the sprouts and drain them thoroughly.

Meanwhile squeeze half a lemon. Peel the garlic and finely chop it.

For the avocado sauce peel the avocado, halve it and remove the pit. Place the flesh in a bowl and blend with 2 tbsp lemon juice, wasabi, garlic, salt and white pepper until smooth. Cover and chill.

In the meantime wash the scallops, pat them dry and season with pepper.

Heat oil with butter in a pan over high heat. Fry the scallops for 45 seconds on each side, seasoning with vanilla salt. Arrange three scallops on a warmed plate. Sprinkle with sprouts and place one dollop of avocado sauce beside each. Serve any remaining sauce separately.
