Grilled Indian Cheese in Tomato Sauce

Ingredients

  • 1 kg ripe tomatoes
  • 2 onions
  • 2 Garlic cloves
  • 2 cm fresh ginger
  • 2 EL vegetable oil
  • 1 TL chili powder
  • 1 pinch nutmeg powder
  • 1 pinch ground cardamom
  • 172 TL Garam Masala
  • 0.25 TL saffron strands
  • 150 ml Heavy Cream
  • Salt
  • pepper (from grinder)
  • 500 g paneer (fresh cheese)','2 EL crème fraîche','2 EL finely chopped coriander

Instructions

    For the sauce, blanch the tomatoes, cool, peel, quarter and cut into large pieces. Peel and finely chop the onions, garlic and ginger.

    Heat oil in a pot and sauté onion with garlic and ginger until translucent. Add tomatoes and spices, stir occasionally and simmer for about 30-40 minutes over medium heat. Then puree with an immersion blender and strain if desired. Soak saffron in 4 EL hot water and mix into sauce with cream. Season with salt and pepper.

    Preheat the oven grill.

    Slice cheese into 1.5 cm thick slices, cut diagonally in half and place on a parchment-lined baking sheet. Slide under preheated grill and grill until golden brown.

    Remove, place in sauce and serve garnished with crème fraîche and coriander.
