Grilled Herring "Green" with Potatoes

- 16 fresh herrings
- 1 lemon (juice)
- Salt
- freshly ground pepper
- 6 tbsp flour
- vegetable oil (for frying)
- 800 g small potatoes
- 3 tbsp butter

Clean the herrings at the fish shop and have them gutted. Wash inside and out, then pat dry. Drizzle with lemon juice, season with salt and pepper. Rinse the potatoes well and cover them almost fully in salted water in a pot; simmer for 15 minutes.

Heat 3 tbsp oil in a heavy skillet. Coat the herrings evenly in flour and fry each side until golden brown, about 8–10 minutes total. Add more oil if needed.

Drain the potatoes and let them dry. Melt butter in a pan and sauté the potatoes covered for 5 minutes. Sprinkle with salt. Arrange the fried herrings on a platter with lemon wedges and serve alongside the potatoes. A green salad pairs well.
