Fish Noodle Salad

Noodles salad with fish from Spoonsparrow tastes spicy‑delicious and provides protein and healthy fatty acids.

Ingredients

  • 400 g penne pasta
  • 1 Shallot
  • 50 g smoked salmon
  • 150 g smoked fish of choice (e.g., trout)
  • 0.25 Cucumber
  • 50 g Pumpkin seeds
  • Salt
  • white pepper
  • 4 tbsp Lemon juice
  • 4 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tsp Mustard
  • 0.5 tsp Sugar

Instructions

    Cook pasta according to package instructions in plenty of salted water until al dente, then drain, rinse with cold water and let cool.

    Meanwhile peel and finely chop the shallot. Wash the cucumber, cut it lengthwise into eighths and dice. Slice the salmon into strips, break the smoked fish into bite‑size pieces.

    Whisk together lemon juice, vinegar, mustard, salt, sugar, pepper, and oil to make a dressing. Gently mix the pasta with pumpkin seeds, cucumber, salmon, and smoked fish; toss with the dressing, cover, and refrigerate for about an hour before serving.
