Danish-Style Pork Roast with Apples and Onions

Ingredients

  • 2 tbsp salt
  • 1 kg pre-cooked pork roast (with rind)
  • 300 ml apple juice
  • 200 ml meat stock
  • 2 Boskop apples
  • 1 large red onion
  • 350 g small potatoes
  • black pepper (freshly ground)
  • 1 sprig rosemary

Instructions

    Preheat the oven to 220°C (425°F) with both top and bottom heating.

    Add 250 ml water and the salt to a heat‑proof dish and stir. Place the pork roast, rind side down, on the lower rack of the preheated oven and bake for about 20 minutes. Drain the brine, score the roast in a diamond pattern, flip it over, pour in the apple juice and stock, reduce the heat to 180°C (350°F) and continue cooking for another 1½ hours.

    Peel, quarter and core the apples, then cut into wedges. Peel and slice the onion into strips. Peel and quarter or sixth‑cut the potatoes. After half of the roasting time, arrange the prepared vegetables around the roast, lightly season with salt and pepper. Wash the rosemary sprig, shake off excess moisture, strip the needles and add them to the dish. Finish cooking the roast with the vegetables.

    Remove the finished roast from the oven, let it rest for about 10 minutes, slice and serve.
