Ingredients
- 1 lime (unprocessed)
- 50 ml olive oil
- 640 g halibut fillet (4 pieces)
- 0.5 bunch thyme
- 8 fresh bay leaves
- Salt
- ground pepper
- 1 thyme sprig (bundled, tied at the stem)

Wash the lime hot, finely grate the zest, and squeeze out the juice. Mix olive oil with lime zest and juice. Wash the fish fillets, pat dry, and place them in the lime marinade. Wash the thyme, shake off excess moisture, and lay it with the bay leaves over the fish; let sit for about 1 hour. Then drain the fish well, lightly season with salt and pepper, and grill on a greased rack with some distance from the heat source, about 3–5 minutes per side.
