Ingredients
- 4 heads chicory
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- Sea salt
- freshly ground pepper

Wash and pat dry the chicory, then cut it lengthwise in half. Heat a grill pan with hot olive oil and sear both sides of the chicory for 4–5 minutes until distinct grill marks appear.

Deglaze with balsamic vinegar, let it reduce slightly, season with salt and pepper, arrange the grilled chicory on a platter, and serve.
