Avocado Tomato Salad

Ingredients

  • 1 Organic Lime
  • 1 small red onion
  • 6 tomatoes
  • 2 Avocados
  • ground cumin
  • ground coriander
  • Salt
  • Cayenne pepper

Instructions

  1. 1.

    Wash the lime, dry it and finely grate some zest. Squeeze out the juice. Peel and dice the onion finely. Wash the tomatoes, cut off the stem ends, remove seeds and dice the flesh. Quarter the avocados, pit them, peel, and dice the flesh.

    Mix lime juice, zest, onion cubes, a pinch of cumin, a pinch of coriander, salt and cayenne pepper in a bowl.

    Fold in the avocado and tomato cubes and let sit for about 10 minutes. Serve the avocado tomato salad in small bowls.
