- 12 pre-cooked peeled and deveined shrimp
- 1 clove garlic
- 2 Tomatoes
- 2 ripe avocados
- Lemon juice
- Salt
- freshly ground pepper
- 2 tbsp olive oil
- 1 tbsp freshly chopped basil
- 12 slices baguette

Preheat the oven to grill mode.

Wash and pat dry the shrimp. Peel and finely chop the garlic. Wash, quarter, core, and dice the tomatoes. Peel, halve, pit, and dice the avocados. Mix the avocado with the tomatoes, season with lemon juice, salt, and pepper. Sauté the shrimp with the garlic in hot oil for 1-2 minutes; season with salt and pepper.

Toast the baguette slices under the grill until golden brown on both sides. Remove, spread avocado mixture on each slice, top with a shrimp, and serve immediately.
