Ingredients
- 200 g mixed leaf lettuce
- 1 juicy pear (e.g., Williams Christ)
- 40 g walnut kernels
- 120 g Roquefort
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp White Wine Vinegar
- 1 tsp Medium Hot Mustard
- chives rings (optional)
- a pinch of sugar
- Salt
- pepper (ground)
- herbs for garnish (optional)
- flowering herbs for garnish (optional)
Instructions

Wash, dry and cut the salad into bite‑size pieces; arrange decoratively on plates or a bowl. Wash the pear, quarter it, core it and slice lengthwise into wedges. Distribute the pear slices and walnuts over the salad. Roughly crumble the cheese and sprinkle over the salad. Garnish with herbs and flowering herbs as desired.

Whisk together oil, vinegar, lemon juice, mustard, sugar, salt and pepper to make a dressing; fold in chives rings if using. Serve the dressing alongside the salad.
