Ingredients
- 2 large zucchinis
- 350 g tomatoes
- 1 bunch spring onions
- 1 bunch Basil
- 80 g small black olives
- 150 g sheep cheese
- 2 tbsp balsamic vinegar
- 6 tbsp Olive oil
- Salt
- Pepper
Instructions

Wash the zucchini, trim ends and slice lengthwise into thin ribbons with a vegetable peeler. Blanch in boiling salted water for 3 minutes, rinse cold, drain well.

Wash tomatoes, quarter them, finely dice. Trim spring onions, wash, cut off ends and slice green parts into fine rings.

Mix all ingredients with olives. Whisk vinegar, salt, oil, and pepper to make a dressing and drizzle over the salad.

Crumble sheep cheese on top and sprinkle again. Tear basil leaves and scatter over the dish.
