Green Salad with Grapefruit and Pomegranate

Ingredients
- 0.5 small head of lettuce
- 1 handful of oak leaf lettuce
- Sage (to taste)
- 2 grapefruits (if you dislike grapefruits, oranges can be used instead)
- 1 Pomegranate
- 1 large red onion
- 1 baby fennel
- 2 tbsp mustard (medium sharp)
- 3 tbsp honey
- 1 tbsp Lemon Juice
- 2 tbsp white balsamic vinegar
- 4 tbsp oil
- 50 ml water
- Salt
- Pepper

Wash and dry the lettuces and sage, tear into bite-sized pieces, and spin dry. Peel the grapefruits with a sharp knife, remove segments from the membranes. Roll the pomegranate gently on a flat surface, cut off top and bottom, score one side, flip over, and extract seeds. Wash fennel, trim small greens for garnish, thinly slice remaining stalks. Peel onion and thinly slice. Place fennel and onion rings in a colander, pour boiling water over them, shock with ice water, drain, then combine with grapefruit segments and pomegranate seeds under the salad and plate on bowls. Sprinkle with fennel greens.

Mix dressing ingredients in a bowl and whisk well. Serve salads and pour dressing at the table.
