Ingredients
- 250 g mixed leaf lettuce
- 250 g fresh buffalo mozzarella (or 8-10 small mozzarella balls)
- 2 Nectarines
- 8 slices Parma ham
- Salt
- Pepper (freshly ground)
- Olive oil (extra virgin)
- balsamic vinegar
Instructions

Wash and dry the salad leaves. Cut the mozzarella into bite‑sized cubes. Wash the nectarines, halve them, core and cut into wedges.

Prepare a dressing with 4 tbsp olive oil, 2 tbsp balsamic vinegar, salt and pepper. Toss the salad in a bowl with the dressing. Add the mozzarella and nectarine wedges and mix gently.

Divide the salad onto four plates and top each with two slices of Parma ham. Finish with a generous crack of pepper and serve immediately with toasted bread.
