Green Salad with Goat Cheese and Sunflower Seed Dressing

Ingredients
- 4 tbsp sunflower seeds
- 1 head endive lettuce
- 4 tomatoes
- 4 tbsp balsamic vinegar
- 2 tbsp oil
- 2 tsp Honey
- Pepper
- Sea salt
- 320 g goat cheese wedges (8 wedges)

Briefly toast the sunflower seeds without fat, then set aside.

Remove outer leaves from the endive and cut off the stem. Split the head into individual leaves, wash and dry them. Slice the leaves into fine strips. Wash the tomatoes, remove stems, and roughly dice them.

For the dressing whisk vinegar with oil, honey, 12 tbsp water, pepper, and salt. Distribute the endive and tomato cubes onto four plates. Drizzle the dressing over the salad.

Top the salad with goat cheese wedges and sprinkle sunflower seeds before serving.
