Mediterranean Goat Cheese Tartlets

Ingredients
- 2 large yufka pastry sheets (pre-made)
- 350 g goat fresh cheese
- 2 Eggs
- 3 tomatoes
- 100 g black olives (pitted)
- 2 tbsp capers (pickled in salt)
- Salt
- freshly ground pepper
- butter
- 50 ml milk
Instructions

Preheat the oven to 200°C.

Flatten the yufka pastry sheets on a work surface and stack them. Using a pastry grid, cut into 8 rectangles of about 20 x 18 cm. Remove excess dough.

Heat the milk and melt butter in it. Spread the melted butter over the interior surfaces of the rectangles, then stack again. Prepare 8 soufflé molds and line each with the prepared pastry sheets.

Rinse capers under cold water and pat dry on kitchen paper. Mix the fresh cheese with eggs, capers, half the olives, salt, and pepper.

Fill the molds with the mixture. Wash tomatoes, halve them, remove seeds, and dice into small cubes. Distribute the remaining olives over the cheese mixture.

Place the molds on a baking tray and bake in the hot oven for 15 minutes until golden brown.
