Ingredients
- 400 g thick green beans (pulled)
- Salt
- 2 red bell peppers
- 1 large red onion
- 4 tbsp olive oil
- 2 tbsp light balsamic vinegar
- Pepper (freshly ground)
- 2 ripe avocados
- 400 g smoked mackerel fillets
- parsley (for garnish)
Instructions

Wash, trim and blanch the beans in boiling salted water for about 6 minutes. Drain, shock in cold water and let drain well.

Wash the peppers, halve them, remove seeds and cut into thin strips. Peel and finely chop the onion; mix with olive oil and vinegar. Season with salt and pepper.

Halve the avocados, twist out the pit and press the flesh out of the skin. Slice into wide, thin rounds, combine with beans, peppers and vinaigrette, and arrange on plates.

Divide the mackerel fillets into pieces, place them over the salad, and garnish with parsley leaves before serving.
