Green Bean Salad

Refreshing, healthy and full of flavor – the Green Bean Salad by Spoonsparrow is the ideal starter for summer!

Ingredients

  • 500 g green fine beans
  • salt, freshly ground pepper
  • 1 bunch spring onions
  • 1 lemon
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Maple Syrup
  • 4 tbsp olive oil (40 ml each)

Instructions

    Rinse and trim the green beans. Blanch them in a pot of boiling salted water for about 12 minutes, drain, shock with cold water, and let them dry.

    Trim, wash, pat dry, and finely slice the spring onions. Wash the lemon hot, grate the zest from one half. Cut the lemon into four wedges and juice the halves. Mix the lemon juice with vinegar, salt, pepper, maple syrup, and olive oil using a stick blender or whisk.

    Place the beans on a deep plate, sprinkle with spring onions and some lemon zest, then pour the vinaigrette over them. Chill the green bean salad and let it rest for 30 minutes.
